I noticed I haven't really cooked any dishes in a long time, I normally make desserts and bake cakes and I think it's time!
My chicken pasta is cooked with a creamy rose sauce with onions, garlic and bell peppers. My wonderful bean salad has black beans, tomatoes, onions, avacado, salt and pepper and lime juice.

Since I am like the only one that like this salad so much in the house, I normally buy the amount of ingredient from my recipe below but cut it in half so to make them twice because the full recipe can fill a 2L ice cream bucket.
Black bean salad
- 2 can Black bean (ready to eat, 540ml)
- 2 medium size tomato (cut in half and remove seeds and most of the juice/liquid)
- 1 medium size white onion (I prefer sweet white onion)
- 4-5 Avocados (Depends on the size of the avocados and how much do you want)
- 3 lime (Juice it!)
- salt and pepper to taste
- Finely chop/dice onion and tomato into a bowl/plastic container. Then squeeze lime juice over it, add salt and pepper (at this stage you don't need to make it salty). Mixed well
- Let the onion and tomato sit in room temperature for 10-20 minutes.
- Rinse and drain the black beans and add into the tomato mixture.
- Just before serving, dice up avocados and mix in the salad. SERVE!
