My lunch today =p

I felt like making something yummy today so I went on rambo mode and search around the kitchen and found some ingredients to make chicken pasta and along with my wonderful bean salad!

I noticed I haven't really cooked any dishes in a long time, I normally make desserts and bake cakes and I think it's time!

My chicken pasta is cooked with a creamy rose sauce with onions, garlic and bell peppers. My wonderful bean salad has black beans, tomatoes, onions, avacado, salt and pepper and lime juice.

Since I am like the only one that like this salad so much in the house, I normally buy the amount of ingredient from my recipe below but cut it in half so to make them twice because the full recipe can fill a 2L ice cream bucket.

Black bean salad
  • 2 can Black bean (ready to eat, 540ml)
  • 2 medium size tomato (cut in half and remove seeds and most of the juice/liquid)
  • 1 medium size white onion (I prefer sweet white onion)
  • 4-5 Avocados (Depends on the size of the avocados and how much do you want) 
  • 3 lime (Juice it!)
  • salt and pepper to taste
  1. Finely chop/dice onion and tomato into a bowl/plastic container. Then squeeze lime juice over it, add salt and pepper (at this stage you don't need to make it salty). Mixed well
  2. Let the onion and tomato sit in room temperature for 10-20 minutes.
  3. Rinse and drain the black beans and add into the tomato mixture.
  4. Just before serving, dice up avocados and mix in the salad. SERVE!
